Of all the christmases that we've had if there was ever a time that we deserved a nice little drink, it's probably this christmas right,

and I want to show you a brilliant way of taking your everyday vodka and infusing it with the flavors of christmas,

and this is fantastic for christmas and beyond and it's so easy.

So look here I've got things like cloves here, standard like that kind of mulled wine vibe.
看一下，我准备了一些丁香，那种热红酒常用的香料。
We've got cinnamon sticks, we've got things like the red peppercorns, you could use black peppercorns.
我们准备了肉桂棒，还有红胡椒，也可以用黑胡椒。
You know herbs like rosemary or bay even a little sliver of chilli makes the most incredible difference and then citrus.
迷迭香或月桂之类的香草即使是一小片辣椒也能让味道大不相同还有柑橘。
Clementine, lemon, lime.
柑橘、柠檬、酸橙。
Any mixture or combination of these the zest or the peel actually is what you want.

So I've got a pan here, I'll put it on a medium-high heat and we're gonna toast these spices.
我准备了一口平底锅，把锅用中火加热，我们要加热一下这些香料。
So the stick goes in, let's get the flavours waking up right.

Let's toast those spices.

I'll take three or four cloves, not many, be subtle.

We're gonna put the red peppercorns in there.

I'm gonna take a little half of chilli through the stalk there, like that.

I will remove the seeds because that's too hot right.
然后会把辣椒籽去掉，因为辣椒籽太辣了。
We want it to be very subtle just a nice little hum of heat and we're going to take that chilli and just pop that in too.

Then we're going to use a peeler and take little bits of lime peel, and two or three will be more than enough.
然后我们要使用削皮器，削一点酸橙皮，两到三片就足够了。
The same with clementine, get that peel in there. Then a few peels of lemon.
小柑橘也要这样削皮，然后把果皮放进锅里。再来几片柠檬皮。
Give that a little shake, as the pan heats up you can hear it scolding and heating up all the natural oils in the peel and the spices.

We'll take a little bit of herb as well, rosemary and that is going to be lovely.
再放一点香草和迷迭香，味道会更佳哟。
That smells amazing.

So take this off the heat and then just carefully pick up your toasted herbs, spices, the cinnamon goes in.
接着把锅取下来，小心地拿起烤好的香草，香料，肉桂放进瓶中。
That little bit of chilli goes in.
再把这个小辣椒放进去。
All those amazing bits of orange and lemon zest, honestly that little bit of heat makes such a difference and immediately it will change the flavour of the vodka.
这些新鲜的橙子皮和柠檬皮，老实说，加热一下就能让伏特加的味道焕然一新。
Let's take those peppercorns get them in as well.
把胡椒也放进去。
So put the lid on and then give it a little shake, move it around and look it's a beautiful thing,
盖上盖子，轻轻摇一摇，晃一晃，看起来很漂亮吧，
it looks nice, a nice little label, a little bow.
加一个漂亮的小标签，或者蝴蝶结。
That makes a beautiful little present for someone you love and after three days that gets really good
送给爱人的一件漂亮的小礼物就出炉了，静置三天后这酒的色泽会越来越好，
and then beyond it keeps changing and evolving.
毕竟酒的口感随时间流失会愈加香醇。
So the question is what to do with a beautiful, infused vodka?
所以问题是，怎么饮用一杯香醇的经过香料浸泡的伏特加?
I've got one that I've made before and I'm gonna make you a beautiful christmas cosmopolitan.
我之前做过一次，我要给大家办一场美妙的圣诞大都会。
It's a brilliant cocktail and in the last sort of five or six years I've enjoyed making myself a civilised, grown-up cocktail just to kind of set things off nice.
这是一款非常棒的鸡尾酒，在过去的五六年里，我一直很享受自己制作一款文雅的、成熟的鸡尾酒，只是为了让生活变得更加有趣。
I think we deserve a little cocktail this year.
我觉得我们今年应该来点鸡尾酒。
So get some ice in whatever kind of beaker or cup you want.

And then we're going to get one of these of course you can use like a little jug or something like that,
然后我们准备一个工具，当然你也可以用一个小罐子之类的东西，
you don't have to be uptight about how you do it.

I'm going to take some ice, put that into your receptacle.
我去拿些冰，放到容器里面。
I'm going to use 40 millilitres of your infused vodka.
我要用40毫升浸泡过的伏特加。
So in that goes, this is last year's one.
这是去年的酒，倒一点进去。
So that will be tasting absolutely fantastic.
味道绝对棒极了。
Then we're going to go in with 10 mls of triple sec. So that goes straight in as well.
然后放入10ml的橙皮甜酒（Triple Sec）。这瓶酒也倒进去了
Now traditionally for a cosmopolitan you'd use cranberry juice and I love that but as it's christmas, come on let's go pomegranate, I love it.
一般来说，做大都会鸡尾酒会用到蔓越莓汁，我很喜欢，不过现在是圣诞节，那就来点我喜欢的石榴汁吧。
I love pomegranate, it's such a beautiful, beautiful thing and look at that, fantastic.
我喜欢石榴，外形非常漂亮，看，是不是很漂亮。
So either or, cranberries, christmassy. Pomegranates are christmassy.
所以要么就用越橘，这个水果也有圣诞节气氛。石榴也有圣诞节气氛。
What I love to do and the flavour from this is amazing
我喜欢用石榴制作，它的味道简直太棒了
and so much better than any juice you'll get out of a carton is just grab it with your hands,
比从纸盒里拿出来的其他果汁的味道都要好很多，
get this and squeeze about 25 mils of your pomegranate juice into there.
你只要用手抓住它，挤25毫升的石榴汁进去。
So what I'm going to do now is put this on top, give it a spank, shake it.

It doesn't matter if you haven't got one of these, you can just stir it.
如果没有这个容器也没关系，可以直接搅拌一下。
You can use your sieve or any small little sieve.
可以用筛子或者任何一个小的过滤装置。
Get your glass which you've got cold which I love.
拿一个冰镇过的杯子，我很喜欢这种容器。
Goes nice and frosty and then you can pour your beautiful christmas cosmopolitan into your glass, come on. Right, let's have a try...
