what do they do, they maybe catch the most delicious salmon in the world, wild natural sustainable

We're going to barbecue a whole salmon served with a spicy herb salsa, grilled veggies and a potato salad

The salmon is around two, two and a half kilos
这条三文鱼大概在四斤五斤左右
so this would be a recipe for approximately six persons

Yukon kita salmon, it's wild, it's natural, its sustainable and it's one of the most oily fish in the world

The reason why is because this is the Yukon River and this is the longest Salmon River in the world
因为这里是育空河，也是世界上最长的盛产三文鱼的河流。
So what they do they throw out the drift nets

these nets are about 25 meters long and they're going to wait

This is such a great way of fishing because it's really small scale

you see mother and daughter or you see father and son or full family

Small nets, not lots of fish so every fish is treated very carefully very well

we have cleaned it we have this killed it

but you can ask your fishmonger to do it for you

I use two sheets of tin foil and have the salmon on top

The first step is score your fish every five centimeters of one centimeter deep

now repeat the other side too

we just add a bit of flavor because the flavor of the fish itself is already so good

Few lemon slices into the belly,three slices now slice is a bit finer
柠檬切片，放到鱼腹里，再放三片到刚才切开的口里
Get a beautiful fennel so it slice it thinly into the belly
茴香，切薄片，放到鱼腹里。
so I've also these beautiful fennel tops here
现在还剩了一些茴香叶子
two orange peels, bit of parsley dill,
两瓣橙子，少量西芹，小茴香
dill and salmon go really well together
小茴香和三文鱼简直就是绝配
salt, pepper and pepper on top
盐，胡椒，外面再来点儿胡椒
bit of olive oil into the belly, another tablespoon, there we go
鱼腹里再抹点儿橄榄油，再来一勺，好了
flip it and repeat it at the other side
翻面，重复刚才的步骤
salt, pepper so now we fold the tinfoil around the salmon
盐，胡椒粉，现在把锡箔纸卷起来
okay so we have it on high heat on the barbecue
好的，现在我们用大火烤
and I give it 10 minutes maybe 12 on each side
一面烤10-12分钟。
and actually the same cooking technique applies, if you would have it in the oven
有烤箱的话，你也可以按照同样的方法用烤箱烤
everton 180 degrees or 350 Fahrenheit for around 25-30 minutes
温度调制180摄氏度，350华氏度，烤大约25-30分钟
and you have a perfect cooked salmon
烤出来的三文鱼会非常完美
okay so the salmon has been cooked now for 8-10 minutes and I turn the package around

and now it's time for the spicy herb salsa

For the spicy salsa, I chopped 1 clove of garlic 1/2 a chili without seeds

mix with some capers, 1/2 a teaspoon of mustard
再加点儿酸豆角，半勺芥末
a splash of red wine vinegar
再倒点儿红酒醋
the juice of half a lemon, 4 tablespoons of olive oil, a handful of fresh mint
挤半个柠檬的柠檬汁，4勺橄榄油，一把新鲜的薄荷
fresh basil and flat leaf parsley
新鲜的罗勒，新鲜的西芹叶
season, some salt and pepper
调料的话，适量盐，适量胡椒
perfect it's fresh, bit creamy will go perfect with the salmon
完美，口感新鲜，略丝滑，配三文鱼再好不过了
For the potato salad, appeal cut and boil 600 grams of potato
土豆沙拉的话，600g土豆切小块，煮开
cool them down and add capers, spring onions, some rocket and a zest juice of half a lemon
放凉之后加入酸豆，香葱，挤半个柠檬的柠檬汁
dress with salt and pepper and a clerk of good olive oil
再来点儿盐，胡椒，适量橄榄油
I served the salmon with some thin slices of grilled zucchini and eggplant
为了搭配三文鱼，我还准备了烤南瓜片和烤茄子片
grill them for two minutes each side and dress with some salt and pepper and red wine vinegar
每面烤两分钟，放入适量盐、胡椒和红酒醋调味
so now the salmon have been cooked for ten minutes each side
现在，三文鱼两面都烤了10分钟了
look at this, it's beautiful and actually if you press with your finger right here
看看，太漂亮了，而且，如果你用手指按这个地方
and then comes loose from the bone
肉立马就会从骨头上脱落
the salmon is ready and this is perfectly cooked okay
这就表示烤好了，这条鱼烤得非常完美
so I deskin the salmon like this with a spoon
用勺子把鱼皮剥掉
so using my spoon, I take it off the bone,
用勺子挖一勺
bit of the potato salad, bit of the grilled veggies here
再来点儿土豆沙拉，来点儿烤蔬菜
and a bit of the salsa it's time for taste mmm
最后再来点儿沙司，可以品尝了
This oily flavor of the fish coming out of this Yukon River
这个肥美的鱼肉就来自这条育空河
it's so good and it goes really well with a potato with the grilled veggies
非常美味，搭配土豆沙拉和烤蔬菜更棒
