OK lovely people, we're going to do the most incredible breakfast or brunch, Scrambled Egg Omelette

With a beautiful tomato salad finished with some basil, and an amazing Chili Sauce

Let's get going

First up I want to do a beautiful simple tomato salad
首先,我们来做一个漂亮的番茄沙拉
Just slice up the tomato's, about a centimeter thick
番茄切片,切差不多一厘米厚,
So we want to celebrate shape, colour and of course flavour
我们要讲究形状、颜色,当然还有味道
What I want to do is mix up the tomato on the plate
把它们都摆在盘里
Try and change up the colours
注意颜色的变化
How beautiful, what a lovely celebration of ingredients
太漂亮了,简直是食材的盛宴
Just sprinkle some lovely sea salt and just a little bit of pepper
撒上点海盐,再一点儿 胡椒粉
And then also a drizzle of extra virgin olive oil
再来几滴特级初榨橄榄油
Just a few basil leaves. Like that
几片儿罗勒叶,就是这样
So that is your basic tomato salad
番茄沙拉差不多就这样了
Now I want to contrast that with omelette like you've never seen before
现在,我要搭配一个蛋饼,保证你从未见过这种搭配
But to go with it I want to I want a little chilli sauce
但是为了搭配蛋饼,我要放点儿辣椒油
Any chilli's you like, have a look down here
什么样的辣椒都可以,看这儿
We've got red, green, yellow, scotch bonnet
我们有红辣椒,绿辣椒,黄辣椒,还有灯笼椒
But what I want to do, is I want to remove most of the heat, I want the flavour of the fruit, I want it to be amazing
但是我想用去掉大部分的辣味,我想要水果的味道,我想做一道不可思议的菜
So I'm going to take the ends off the chili, like that
把辣椒头去掉,这样
And then I want to run the knife, down the middle
接下来我要用刀,从中间破开
And I'm going to remove the white membrane
把白色的部分去掉
And the chili seeds and that's the really really hot part
还有辣椒籽儿,也就是辣椒最辣的部分
We don't want that OK
我们可不想要辣乎乎的,好吗
And then all I want to do is finely slice the chilli's like this
接下来把辣椒这样切碎
Now this chilli sauce you can use on anything
用这种方法做的辣椒油你可以放在任何菜里
With pasta, with salad, on cheese likes mozzarella, feta cheese.
意大利面、沙拉,或是意大利干酪、菲达奶酪等奶酪里。
You can put it on roast, grilled, steamed fish
也可以放在烤鱼、蒸鱼里
And if you make it, it'll last for about 4/5 days easily in the fridge
做这种辣椒油的话,放冰箱放4-5天完全不成问题
So when it's nice and finely chopped, chili in
切好之后,把剁碎的辣椒放在盘子里
Pour in some nice oil
倒点儿油
About 3 or 4 table spoons goes in, and then the juice of 1 lemon
差不多3-4勺,再放1个柠檬的柠檬汁儿
So lemony, hot chili sauce
就成了柠檬味儿的辣椒油了
We definitely need a nice pinch of salt in there
一定要再放点儿盐
Mix it around
搅拌均匀
OK it is time for the most important bit of this recipe
好了,最关键的环节来了
We're going to make a Scrambled Egg Omlette, so what does that mean?
我们要做一个蛋饼,什么意思呢?
We want the kind of shape of the omelette, that silkiness, to cover and wrap up
我们要做蛋饼一样的造型,那种丝滑,然后把它卷起来
Really curdy, gorgeous, juicy scrambled egg
成凝乳状的,漂亮而多汁的炒蛋
So 6 eggs on into this bowl, a little drizzle of milk, just a splash
打6个鸡蛋在碗里,倒点儿牛奶,一点点就可以
So whisk up the eggs with a little pinch of salt
把蛋液搅拌均匀,加点儿盐
Into the pan we're going to go with some butter
锅里下黄油
As soon as that melts we're going to go in with the egg
融化之后倒入蛋液
And then I'm going to use a spatula just to go around the sides
接下来用小铲刮下周围的蛋液
And just slowly mix around those curds
慢慢地搅动
Cover every part of the pan and be breaking it up
注意每个地方都要搅到,把他们切碎
And you can be quite fast
可以快点儿
And then as it starts to firm up and get to that point where it's setting, I want to put a little bit of cheese in the middle here
之后蛋液开始凝固成形的时候,在中间放点儿奶酪
And we're going to take it off the heat, and you can see, just look at that texture
从火上端下来,看这质感
You've got omelette on the bottom, scrambled egg on top,
底下是蛋饼,上面则是炒蛋,
Then were going to use this to flip it, like this
接下来用这个把它翻一下,像这样
And were going to use the pan just to kind of go like that
之后用锅,像这样,
And what's going to happen, the omelette just goes to the edge, now when it goes to the edge like that, just get this and fold it back
就可以,蛋饼就滑到锅边去了,现在,蛋饼滑到锅边之后,用这个把另一边也折过来
And you'll get that wonderful shape
完美的造型就有了
And then we don't want to overcook the eggs because eggs are really sensitive, so we're going to hold it like this
接下来,我们要小心把蛋给烘糊了,因为鸡蛋很容易变糊,所以我们这样颠着锅
Go over to our salad like this, and turn it out
像这样把它放到沙拉上,倒出来
Straight onto our salad, look at that
直接放在沙拉上,瞧瞧
We get our knife and we go down, come down look
用刀划一下,划得透一点
We're going to cut deep into our omelette and just splay it open like that, look at that
深深得划进我们的蛋饼,把它像这样划开,看看
Then we get our chilli sauce in the depths in the most silky, perfectly cooked omelette like you've never seen before
接下来淋上我们的辣椒油,淋在最丝滑最完美的蛋饼上,这应该是史无前例的做法
Finished with a few bits of basil on top
最后在上面放点儿罗勒叶
And brothers and sisters, come on, who wouldn't love that, with hot toast a cup of tea, happy days
兄弟姐妹们,赶紧做起来,我就问,热腾腾的菜,再配上一杯茶,这样的小日子谁不喜欢
The whole point of this, is you get that lovely silky blonde outside, lovely scrambled inside
重要的是它不仅看上去丝滑无比,里面也煎得很透
And then you hit that up with the chilli sauce and the tomatoes
之后浇上辣椒油,再配上番茄

It's so good

It's a really wonderful technique
手艺真不错
And I believe, you need a pan that doesn't have hot and cold parts, you need an even cooking, right
我觉得,你也需要一个不会受热不均的锅,一个受热均匀的锅,对吧
It needs to be non-stick, you can just wipe that out now, don't even bother putting it in the sink, just wipe it out, it's good to go again
一定要是不粘锅,这样你就能擦一擦,直接都不用洗,只要擦一擦,就可以接着用了。
