Dumpling is a broad class of dishes that consist of pieces of dough (made from a variety of starch sources), often wrapped around a filling. Dumplings may be prepared using a variety of methods, including baking, boiling, frying, simmering or steaming and are found in many world cuisines.
其实,“dumpling”还真就可以指所有有皮(wrapper)有馅(filliing)的食物。不仅在中国,全世界的“饺子”做法都多种多样,蒸煮炸样样俱全。
Jiaozi

Jiaozi filled with ground pork or beef, cabbage, bamboo shoots, and scallions are a popular dish at Chinese restaurants and Lunar New Year celebrations. Serve them as an appetizer, with an easy tangy dipping sauce made from soy sauce and rice vinegar.
饺子的馅儿通常包含猪肉糜或牛肉、白菜、竹笋和葱花,在中国餐馆和春节庆祝活动中是很受欢迎的一道菜。可以把它们作为开胃菜,配上由酱油和米醋制成的味道浓烈的蘸酱一起吃。

Har Gow—plump, juicy shrimp packed into translucent purses made from a combination of wheat and tapioca starch—are a particular dim sum. Pork fatback mixed into the shrimp provides plenty of moisture, melting as the dumplings steam.

Chaoshou omits the broth and instead serves the dumplings coated in a fiery aromatic sauce. Make it with garlic, vinegar, and a homemade oil infused with roasted chilies and Sichuan peppercorns for their signature mouth-numbing heat.
抄手省去了汤汁,而是在饺子上涂上一层辛香的酱汁。酱汁里可以放入蒜末、醋和自制辣椒花椒油,以此打造招牌的麻辣口感。
