Hey guys, salut, this is Alex the French Guy Cooking, and today I'm going to show you my take on a very French classic, the Salad Nicoise.

嘿,朋友们,你们好,我是“下厨的法国人”Alex,今天我给大家带来的我对经典的法菜沙拉尼科斯的独特发挥。
the dish originated from the South of France, from the city of Nice to be more precise.
这道菜起源于法国南部,准确的说是来自尼斯市。
and it's a celebration of freshness and of the season.
这道菜讲究的是新鲜感和季节性。
there is no cooking involved in this recipe, only preparation.
这个食谱不需要烹饪,只需要准备好所有的食材就可以了。
and that's a really perfect fresh and healthy dish that you can make for your family at lunch.
这是一道非常完美的,既新鲜又健康的菜,大家可以在午餐时间做给家人吃。
so first off, let's slice a few tomatoes.
首先,我们切一些西红柿。
so I'm using just simple red medium size tomatoes.
我用的就是那种红色中等大小的西红柿。
so if you want to, you can use any tomatoes you like, like green, yellow, big ones, small ones, cherry ones.
喜欢的话,大家也可以用别的你们喜欢的西红柿,绿色的,黄色的,大的,小的,圣女果都可以。
I like to have different size of tomatoes.
我喜欢把西红柿切成不同大小。
so to remove the excess of water from the tomatoes.
为了去除西红柿中的多余水分,
place a few sheets of kitchen paper on a bowl.
我们可以在碗上放几张厨房纸。
put your tomatoes on top.
然后西红柿放上面。
next up let's slice up a bell pepper.
接下来,我们切一个甜椒。
remove the bottom, remove the top, then remove the seeds, and slice it into thin circles.
尾切掉,头也切掉,然后把籽也剜出来,并将其切成薄圈。
circles, you know, smaller rings ok.
圆圈,就是小圆环好吧。
let's set this aside.

next up, let's slice up a few radishes.

radishes have that distinct peppery flavor, which will go perfectly with the salad.

let's place those on the side.

so next, we're going to slice up a few hard-boiled eggs.

if you want to make those, that's easy, you just boil them for 10 minutes.
煮鸡蛋也很简单,只需要把鸡蛋煮个10分钟就可以了。
whenever you buy eggs, it's always good to go for the best quality you can go to.
买鸡蛋的时候,最好买你能买到的质量最好的鸡蛋。
like we did for the tomatoes, it's great you have some quarters, and some hearts as well.
像切西红柿一样,鸡蛋我们也可以切成四分之一和二分之一大小。
so the reason why I'm putting everything on the side, is just to be easy at the end to dress up the dish in a matter of minute.
我之所以要把切好的食材全部放在一边,是为了能在一分钟之内轻松摆好这道菜。
right, next, we are going to slice up a few spring onions.
好了,接下来,我们要切点儿葱。
remove the bottom, remove the top, and then slice it.

set this aside too.

the next part of this recipe might be the trickiest one.
接下来可能是最这道菜最棘手的环节。
you gotta prepare the artichoke.
就是准备洋蓟了。
remove the stem, remove the top, and then remove the outer leaves, because they are tough.
把茎去掉,把头也切掉,然后摘掉外面的叶子,因为它们很硬。
you don't want to eat the tough leaves, nobody wants.
大家应该不喜欢吃口感比较硬的叶子吧,没有人喜欢吃的。
so here's a little tip, if you don't want your hands to go totally black after peeling an artichoke, then you can dip them into citrusy water.
这里有一点小技巧,如果你不想在剥完洋蓟把手弄得黑黑的的话,那你可以先用柑橘水洗一下手。

now it's time to turn the artichoke.
削的时候一边削一边转动洋蓟。
so basically we are only leaving the best part, the most tender part of the artichoke.
所以,我们基本上只要洋蓟最好,最嫩的部分。
cut it in half, and to remove any hair if there is one.
切成两半,里面有绒毛的话,就刮掉。
so when the artichoke is clean, cut it into thin slices.
洋蓟清理干净以后切成薄片。
and then drop it into the citrusy water.
然后放入柠檬水中。
so I chose very young artichokes, otherwise they are not edible, wrong.
我选的都是非常嫩的洋蓟,太老的话是不能吃的,不好。

all the preparation work is over, all we need to do now is spining up some stuff beautifully of course.

所有的准备工作都做完了,现在我们要做的就是把所有的食材堆成漂亮的形状。
so before we add any ingredients to this plate, we need to add some garlic, but if we just slice up some garlic, it would be too strong.
在我们往这个盘子里放任何食材之前,我们还需要一些大蒜,但选用切的大蒜的话味儿就太冲了。
I'm just gonna rub a tiny clove of garlic, 1/2 of a clove of garlic, on the plate.
我们只要在盘子上擦一点点大蒜,差不多二分之一瓣就好了。
this way we get the flavors without the kick.
这样既有了蒜的口感,也不会太冲。
so first off, let's place the green bell peppers, because there is so little work in the preparation,
我们先放绿色的青椒,因为准备工作很少,
you can give some extra love to the presentation.
所以在摆盘的环节就需要格外的用心。
now the tomatoes.
现在放西红柿。
so now let's add the eggs.
现在我们放鸡蛋。
as you can see, there is no meat in this recipe.
大家或许已经看到了,这个食谱中是没有肉的。
but with the eggs, it's a nice take of protein.
但鸡蛋是很好的蛋白质来源。
now the artichokes.
现在放洋蓟。
a few radishes.
一丢丢樱桃萝卜。
and finally let's add some toppings, very important toppings.
最后我们来添加一些配料,非常重要的配料。
first off, spring onions.
首先是葱。
don't go crazy on spring onion. it still is a bit pungent.
葱花儿不要放太多,葱花儿也很冲的。
next, some small and young broad beans.
接下来放点儿小小的嫩蚕豆。
so now is the turn of two of the most important ingredients of this recipe.
接下来是这个食谱里最重要的两种食材了。
anchovies and also some Nicoise olives.
凤尾鱼还有法式橄榄。
these are not exactly Nocoise olives, but these are black olives.
其实也算不上法式橄榄,但确实是黑橄榄。
and if you live abroad, then you can use almost any olives you like.
如果你住在国外,那你也可以随便用别的橄榄。
the finishing touch is adding a few basil leaves.
再来点儿画龙点睛的罗勒叶。
just you know for the freshness and for the plane.
用来提鲜同时也是为了装点这盘菜。
All this salad need is a drizzle of extra virgin olive oil.
最后,这道沙拉还需要淋点儿特级初榨橄榄油。
no vinegar, not needed, because the the tomatoes are already a bit acidic.
不用放醋,不需要,因为西红柿已经有点酸味了。
and also no salt, so we get the olives and the anchovies. perfect.
也不用放盐,因为有橄榄和凤尾鱼。完美
It's a very popular salad and it's meant to be share.
