This time I was invited to attend a sushi event
这一次我受邀参加了一次寿司宴，
and see two of Tokyo's top sushi chefs go head-to-head by presenting their own original sushi
观摩了两位东京顶级寿司之神联手展示他们的独家寿司
Now I've never been the type of person who feels the need to experience high-end sushi
虽然我不是那种觉得要尝一尝顶级寿司的人，
However after tasting this, you really realized the difference between the quality
但是，吃过这次的寿司之后，真的可以感觉到不同的寿司口感的差别。
And after seeing how passionate and serious the chefs are about sushi
看到厨师们对寿司的热爱和严肃的态度，
It makes you realize that sushi is more than just rice and raw flesh
你会觉得寿司远不止是米饭和生鱼片
but a piece of delicate artwork that has taken years and years to master
而是一件精美的艺术作品，需要年复一年的付出才能得心应手
The two sushi chefs that came together for this event,
这次活动邀请到的两位寿司大厨
both own famous well-known sushi restaurants inTokyo
都在东京开有著名的寿司餐厅
and we were all brought to the secret shop that had a very unique concept
我们被带到了一个概念非常独特的隐秘小店
First up it was Kimura sushi
首先登场的是木村寿司
and what's different about Kimura sushi compared to the other 20 Michelin-stared sushi restaurant in Tokyo is that he serves aged-fish sushi
和东京其他20家米其林星级寿司店的寿司相比，木村寿司的独特之处在于木村先生做寿司用的不是新鲜的鱼肉
So here is me trying my first ever aged sushi
这是我第一次品尝用非新鲜鱼肉制作的寿司
and because I wanted to respect the chef's work and the atmosphere
我想尊重厨师的劳动成果以及餐厅的氛围
I don't feel myself talking in this video

the concentration Kimura sang has in his eyes when he was making sushi really told you that he's not playing around

and that he is going to deliver the best sushi you ever have

some of these fish were aged only for few days
这里面的有些鱼才放了几天
yet some of these were aged up to a month
而有的鱼则放了长达一个月
but the biggest difference I felt was that the aging fish had a lot more saltiness and flavor to it
但我感觉最大的不同在于这些放置之后的鱼更咸一点儿，更有味儿
and no fishy smell or aftertaste which I really enjoyed
没有鱼的腥味，也没有后劲儿，我很喜欢
And now we have sushi Numba
现在我们要吃Numba寿司
Numba sang prepares a very unique and traditional Edomaya sushi that has been passed down generation to generation
Numba先生做的是一种非常独特而传统的江户前寿司，这一手艺已经代代相传了好多年
Sushi Numba is a small 12 seat of sushi restaurant located in the local suburb of Tokyo
Numba寿司餐厅很小，只有12个座位，位于东京郊区
The restaurant has been running for over 50 years, just by word of mouth and friend introductions
这个店已经开了50多年了，客源都是口碑或朋友介绍
However this time Numba sang said to me that it was okay for me to share his shop with you all here
但是这一次，Numba先生跟我说，我可以跟你们分享他的店
What I liked about Number sang sushi was that he puts a little twist on the normal sushi and makes it in his own way
我喜欢Numba先生做的寿司，因为普通的寿司在他手里轻轻一捏就变成了他自己的寿司
Also it had a generous fish portion compared to rice
并且，搭配米饭的鱼肉的量也很大方
So you could really taste the freshness of the fish
所以，真的能够品尝到鲜美的鱼肉
The thing I want to mention to you the most is that Numba Sun made me change my opinion about sea urchin
我最想跟你们说的是，Numba寿司改变了我对北紫云丹的看法
and now I realize that that is actually good quality sea urchin I can actually enjoy it
我发现，Numba家的北紫云丹是非常好的那种，我都可以接受呢。
