It's a great recipe, it's a great principle. The great thing is it's quick.

so this is beautiful yellow fin tuna, it's totally sustainable.

I'm just gonna take this little end off.
我们把这点儿去掉。
See how there's these little veins here, right?

I'm just gonna take a little chunk off here,
我们从这上面切一小块下来,
and you want a nice thick chunk, and you can actually cut it into sort of like cubes.
我们要切厚厚的一小块,切成小方块的样子。
but what I want to do is just make a little bed of sesame here.
我们先撒上一层芝麻,
So pat the tuna all around, and the great thing about this dish is you put a little oil in, and a little sesame oil
给金枪鱼的每一面都蘸上芝麻,做这道料理很棒的一个环节就是我们往锅里倒上油,再倒点儿芝麻油,
Let's turn it up a little bit and we'll go in with our tuna, just like this.
我们把火稍微开大一点,把金枪鱼肉放进去,就这样。
So we're not trying to cook the tuna, no no no no. we don't want to cook it, we want to just sear the sesame seeds onto it.
我们并不是要把这个金枪鱼肉给它煎熟,不不不,我们不需要把它煎熟,我们只需要让它蘸上芝麻就好。
After about 20 seconds, we'll move it on, like that,
20秒以后,我们给它翻个面儿。
See what we've done? That's the cooked side there.

And every 20 seconds we just move it around, it's going to be completely raw in the middle, completely raw.

and I'm just doing the four sides, not the other two sides.

So, that's done, it's that quick.

Now in that same pan, I'm going to put a little oil just to one side,

Okay. and I'm just going to finely slice some garlic.

And I'm going to make little garlic chips, they couldn't be easier to do.
我们炸点儿蒜片儿,这个没什么难度。
Try and keep them the same thickness.
尽可能切一样薄。
If I was sensible, I would have done these first, and flavoured the oil that I cooked the tuna in.
我其实应该先把蒜片切好,然后用煎金枪鱼的油直接炸。
Just shake that pan, see what I'm doing, just shaking it, to one side.
这样把锅倾斜一下,让油都流到一边儿。
The smell is phenomenal, and as soon as they're golden, we'll take them off
味道香得不行,蒜片儿炸黄了就立刻端下来。
and they're basically going to be like little crisps, little chips.
炸出来的蒜片儿就像小小的薯片或者薯条一样。
So all I simply do is pour that garlic off, like that.
我们只需要把蒜片儿给它倒出去。
Okay so next thing we're going to do is a little dressing.
接下里我们来调点儿蘸料。
I'm just going to make a gorgeous little dressing from a piece of ginger.
我们就用一片姜来做一个漂亮的蘸料。
And we gonna grate that ginger, just a little thimble, a little teaspoon. I'll show you it.
我们把姜擦成末,只需要一点点就好了,一小勺的样子,给大家看一下,
That is all we want, alright? that's all we want.
这么多就好了。我们就需要这么多。
And then into there, we're going to add a teaspoon of soy sauce, half a teaspoon of sesame oil.
接下来,我们往碗里加入一勺酱油,半勺芝麻油。
We can put it a little bit of that chopped garlic, very very nice.
我们也可以放点儿蒜片儿,很好。
And we're just going to mix that up and we'll add in about a teaspoon and a half of lemon juice or you could use lime juice.
搅拌均匀,倒入一勺半的柠檬汁,
and very simply, all I'm going to do is go over to my seared tuna here.
接下来很简单,我们准备切蘸上了芝麻的金枪鱼。
and just cut it into nice centimetre slices, and then we'll move this over to our plate here.
金枪鱼切片,切成一厘米厚的样子,放入盘中。
I'm just gonna put little bits in and around like this,
四周淋上酱汁,
We'll take a few bits of our garlic chips, here and here.
我们放点儿蒜片儿,放在这里。
just take a few lovely little leaves of coriander, look at this this guys colorful.
我们摘两片漂亮的香菜叶,大家伙儿看好啦。
and this is the thing about this sort of food, we don't need much of anything.
做这种料理,我们根本不需要准备很多食材。
you know we can have just a tiny bit of spring onion.
我们还可以切点儿香葱。
literally take one piece of chilli for every bit of tuna,
每片金枪鱼我们给它配上一个辣椒圈。
and there you've got an Asain seared tuna.
现在大家面前的就是亚洲风味的芝麻金枪鱼了。
and whether you're using sesame seeds or just oil, the principles all the same.
不管你用的是芝麻,还是就是油,做法都是一样的。
you could do it Moroccan style, using Harissa and beautiful salted lemons and gorgeous things like that,
大家也可以用哈里萨辣椒酱和咸柠檬做成摩洛哥风味或者其他风味的。
and it is very beautiful. and then I just finish it with a little olive oil.
卖相不错吧。最后再给它淋点儿橄榄油。
and there you go, beautiful seared tuna,
好了,美美的芝麻金枪鱼就做好了,
asian-style, it's a bit of a fusion dish, but very very delicious, and very quick.
亚洲风味的。这其实是一道复合味道的料理,但是也非常非常美味,而且做起来很快。
something a bit different, those flavors
这道菜是比较不一样的大家平时不怎么会吃到的味道。
by the way, those Asian flavors, you know the soy, the lemon, the chilli, the ginger, you can't get it wrong.
那些亚洲味道,酱油,柠檬,辣椒,姜,有了这些,怎么做都不会失误。
it's really good with any seared fish. and that is simply delicious. Have a go.
