Noun clauses are groups of words that act as a noun.
名词从句是用作名词的一组词。
They often begin with That or a word beginning with "wh-", such as, where, when, why or what.
它们经常以That或where, when, why或what之类以“wh-”开头的单词开始。
I Guess today's topic is verbs.
我猜今天的主题是动词。
But those examples didn't use the word That.
但这些例子没有用到That。
As in "I guess That today's topic is verbs."
它应该像“I guess That today's topic is verbs.”
That's true! You can use the word That,

but English speakers often leave out this word in everyday conversation.

What about the uncertainty part?

To show Uncertainty, Americans use the common uncertainty verbs Think, Believe and Guess before noun clauses.
为了表示不确定性,美国人会在名词从句前使用常见的不确定动词Think, Believe和Guess。
The noun clause presents the idea, and the verb shows uncertainty.
名词从句表达想法,动词表示不确定性。
I guess I did well on the test.

I believe the game is today.
