如何自己制作冰淇淋

Woo! It's getting hot out!

哇!天气变热了!
Squeaks and I are craving some ice cream, but we don't have any.
我和吱吱想吃点儿冰淇淋,但没有存货了。
So, we're going to make ice cream using science!
所以,我们准备利用科学制作冰淇淋!
We know that ice cream is made out of cream and sugar and a flavor.
我们知道冰淇淋是用奶油、糖和香料制成的。
And we know that it's frozen, but it's not rock-hard like plain ice.
我们也知道它是凝固的,但不像普通的冰那样坚硬。
It's more like very cold whipped cream!
它更像是搅拌好的凉奶油!
So, we have cream and sugar. And we also have vanilla that we'll flavor our ice cream with.
所以,我们有奶油和糖,也有调味的香草。
And now we're going to take these three ingredients and turn them into ice cream!
现在,我们就要利用这三种原料制作冰淇淋!
And you can do this at home, too.
你也可以自己在家做哦!
You'll need your three ingredients: sugar, vanilla, and cream.
你需要三种原料:糖、香草和奶油。
Or you can use milk or half and half instead of cream.
或者你可以用牛奶代替奶油,或者两者各一半。
You'll also need a measuring cup, measuring spoons, oven mitts or a towel, a small sealable plastic bag,
你还需要一个量杯、量匙、烤箱手套或毛巾、一个小密封塑料袋、
a large sealable plastic bag, ice cubes, a timer, and a grownup to help.
一个大密封塑料袋、冰块、计时器,并找个大人帮忙。
The last thing you'll need is the important one: salt!
最后你需要一件非常重要的东西:盐!
First, take your three ingredients and put them into the smaller bag.
首先,把你的三种原料放到小袋子里。
We're using a half cup of cream, a half teaspoon of vanilla, and a tablespoon of sugar.
要用半杯奶油、半茶匙香草、一汤匙糖。
And then, seal up that bag.
然后,把袋子封起来。
Next, put ice into the big bag.
接下来,把冰放进大袋子里。
We're putting four cups of ice in it. That'll make the cream really cold.
我们要往里放四杯冰。那将使奶油非常冷。

But, here's the amazing scientific part!

但是,不可思议的科学就要发生了!
We're going to add salt to the ice. We're adding half a cup of salt.
我们要往冰里加盐,加半杯盐。
It's important to add salt to the ice, because that will make the ice cream freeze much faster.
在冰中加盐很重要,因为这会使冰淇淋凝固得更快。
And here's why: If you've ever put out salt on your sidewalk or driveway in the winter, you know that salt can melt snow.
原因是:如果你冬天曾在人行道或车道上撒过盐,你就会知道盐能融化雪。
That's because when there's lots of salt in water, it needs to be colder than plain water does to freeze.
那是因为水里有很多盐时,冰点比淡水要低。
Even if it's cold enough outside for plain water to freeze into snow,
即使外面冷到淡水可以冻成雪花的程度,
it's probably not cold enough for salty water to freeze!
也可能达不到咸水冰冻的冰点。
So when you add salt, the salty snow melts.
所以,你加盐时,咸雪就融化了。
When you add salt to the bag of ice, the same thing happens.
当你往冰袋里加盐时,也会发生同样的事情。
The ice is cold enough to freeze when it's just plain water.
它只是淡水时能够冻成冰。
But it's not cold enough to freeze when there's lots of salt in it!
但里面有很多盐时,就冰冻不了。
So the ice cubes in the bag start to melt!
所以袋子里的冰块开始融化!
That melting is really important for making your ice cream really cold, really fast.
融化很重要,它会让你的冰淇淋非常快得变冷。
Because as the ice melts, it draws in heat, making the things around it much colder—including your ice cream!
因为冰融化时吸热,会使它周围的东西变得更冷,包括你的冰淇淋!
So, now that we've added the salt to our big bag,

we're going to put the small bag inside and seal it up.
我们要把小袋子放里面封好。
And the ice is going to start to melt and make the cream, sugar, and vanilla in the smaller bag REALLY cold.

While that's happening, we're going to make sure the ingredients in the bag become ice cream!

This is where we need our oven mitts or a towel because this bag is really cold.

So protect your hands and hold onto the bag.

Now we're going to shake it!

It's good to have a friend to help you with this part. Cause it takes a while.

Squeaks and I have made butter before, and we shook up the cream until it got hard and turned into butter.
我和吱吱以前做过黄油,我们一直摇奶油,直到它变硬,变成了黄油。
But before it turned into butter, it was soft and fluffy whipped cream.
但在它变成黄油之前,它是柔软蓬松的打发奶油。
Ice cream is harder than whipped cream, but softer than butter,

so we'll have to shake our cream longer than we would to make whipped cream,

but not as long as we would to make butter.
但要比制作黄油的时间短。
There are tiny pieces of fat in the cream, and as we shake the bag,
奶油里有小块脂肪,当我们摇袋子时,
they'll start to clump together until the mixture becomes thick and creamy, just like ice cream should be.
它们开始粘在一起,直到混合物变得浓稠成脂状,就像冰淇淋应有的样子。
If our salt water solution is as cold as if feels, that should take about five to ten minutes. Ready, Squeaks?

It's getting there! It looks like whipped cream now. Just a little bit longer.

It's looking a lot more like ice cream to me. Let's open it and check.
